Espresso Amoré
We at the Papagalos Restaurant are in a constant pursuit of perfection and
nowhere is this better illustrated than in the quality of our espresso. We follow
the basic rules as put forth by such coffee luminaries as Cafe Roma, by
keeping the water temperature around 195F, the atmospheres at 9, and
having a 20 to 25 second extraction time.
Of course the water is purified and our organic beans delivered fresh. Other
factors that play a pivotal role in the quality of the brew include the grind size,
tamping pressure, and the cleanliness of the espresso machine. Crema, the
creamy caramel-like froth on top, is our objective every time we pour a cup. A
partial cream (or quickly dissipating crema) is due to under extraction leaving
extraction which results in a bitter brew. In between these two extremes is
where you want to be.
